No-Bake Green Power Bites Recipe

Several months ago, we “discovered” no-bake energy bites and immediately fell in love. Meaning that I’d seen recipes for them all over Pinterest for years, but never tried them.

Until one day. It was part of my master plan to get through multiple flights and flight changes with the kids without losing my sanity, trying to find airport food for them on (potentially) limited time, or begging flight attendants for snacks.

My master plan worked, but not because of the energy bites. We took a snack backpack full of little baggies of trail mix, apple sauce, sliced apples, and I don’t remember what else. But I remember very clearly that the energy bites remained packed in individual snack packs, safely in our freezer. At home. The whole time we were in Argentina.

It was a blessing in disguise, though, because when we finally got home, it seemed like the only ones who weren’t jet-lagged were (surprise!) the kids. So they pretty much sustained themselves on those high-protein no-bake energy bites for two days after we got home.

Since then, we’ve experimented with variations on the recipe, and loved every one, particularly this one.

See, I’m determined to pack the kids’ diet as full as I can with nutrient-rich food – whether they like it or not sometimes, but for the most part, I try to keep it in forms that they like.

Green smoothies have proven to be a great way to get my son to eat his greens, and Hadassah will eat a spinach salad all day long.

So here I am, hiding it in a healthy snack I know they’ll both love.

In my book, adding powdered greens transforms energy balls into No-Bake Power Balls. As you may have noticed in the title of this post.

I use my blender to powder freeze-dried kale. I like that it’s flash frozen while it’s fresh before having the moisture evacuated – that means that all the nutrition of fresh kale is still there.

Freeze-dried kale is easy to order – you can go through my link here – but if you don’t have it, let me encourage you not to let that stop you from finding or making a good substitute for this recipe!

You can use any powdered greens you have on hand, or even dehydrate and blend up your own greens.

I know I’m a greens and healthy snacking nut, but it’s only because of such a huge improvement in my energy level and overall well-being since adding them to my daily diet!

Instructions

  1. Combine all ingredients in a large bowl and mix well
  2. Form into one inch balls
  3. Refrigerate for up to two weeks, or freeze.
  4. Enjoy!

  1. These look very good. I was wondering if you could substitute moringa powder for the kale powder as I usually have that on hand. Or would it be too bitter. I’m new to this type of diet, so thank you for your time.

  2. I just made these with a vanilla protein powder, and used the Essential 10 greens powder. I did the half coconut and half quick oats. They didn’t hold together at first so I added some blackstrap molasses and they are AWESOME! My kids love these new “cookies”. Thanks for the base recipe I think there’s lots of variations you can make with this.
