Now that it’s (finally!) pumpkin season again, I’m going gaga over here with all the pumpkin flavored snacks!

Whenever I think I haven’t changed all that much as an adult, I think about the meals and desserts I used to like to make.

You know the kinds; the more elaborate, the better. The more ingredients, the better. The more time-consuming, the better.

Now I’m a homeschooling mom of two, renovating a small house, while also earning the majority of our family’s income.

No-bake snacks are kind of my thing. The simpler, the better.

I bet I’m not the only mom out there feeling this way. 😉

I honestly started working on this recipe because I wanted to make a peanut butter-free no-bake granola bar (I don’t want much, do I?)

But after three iterations, it just wasn’t working, so I gave up and rolled them into balls.

Honestly? Balls are so much easier, and so much more bite-sized and easy to put in snack bags for the kids anyway.

The kids have really enjoyed these Pumpkin Chocolate Chip Energy bites as snacks while we’re out working on the house this week.

They’re easy to carry with us, and easy to eat without a mess, plus, while they’re not as filling as a high-protein no-bake energy bites, they’re high in fiber, which makes them a great tide-me-over until supper.

Pumpkin Chocolate chip Energy Bites

These simple and tasty energy bites are quick to make and perfect to take!

Ingredients

Scale
  • 2/3 cup pumpkin
  • 1/4 cup honey, maple syrup, or agave
  • 1 1/2 teaspoons vanilla
  • 1 1/3 cup oat flour
  • 2/3 cup oatmeal
  • 2 1/2 teaspoons pumpkin pie spice
  • 1 cup mini chocolate chips

Tip: Make your own oat flour by blending oatmeal until mealy. (I use my smoothie blender. a food processor or other blender works too!)

Instructions

  1. Mix ingredients together in order listed, adding chocolate chips last.
  2. Roll into 1″ balls
  3. Refrigerate for up to a week.
  4. Enjoy!
