Oven Roasted Asparagus Recipe

Last year, my husband planted a big patch of asparagus. I had already planted a little bit, but he took it to the next level, by ordering bulk asparagus crowns.

He always does that. He wouldn’t admit it, but his words to live by are “go big, or go home”. 

Sometimes, I’m not a fan – like that time he brought home 100 ducklings. 

But this asparagus patch was something I could totally get behind. 

This year is our first harvest, and I think it’s safe to say the asparagus garden is a big hit.

We’ve harvested over 15 pounds of asparagus so far, and it’s still going – and this is just the first year. I’m hoping that next year we’ll harvest enough to freeze extras for later. 

I didn’t think the kids would be very happy about all the asparagus, but they’ve discovered that they really enjoy eating it raw. I remember doing the same as a kid, but for some reason, it doesn’t appeal to me anymore. 

As for Gabe and I, our all-time favorite is a simple oven-roasted asparagus. We definitely enjoy other variations, such as asparagus soup and using some of the extras to make spring veggie egg bites, but for the side dish to an average lunch? Roasted with salt, please! 

I feel like roasted vegetables in general, are a busy mom’s best tool for getting nutritious food on the table. Roasted radishes are our favorite way to eat radishes. And while Gabe always prefers sweet potato casserole, I love them savory, and thyme-roasted sweet potatoes are not only my own favorite, but super easy as well.

Oven Roasted Asparagus Recipe

Ingredients

Scale
  • 1 lb asparagus
  • 1 Tablespoon olive oil
  • salt

Instructions

  1. Preheat oven to 425º
  2. Wash asparagus, and snap off tough ends
  3. dry with a clean cloth, or let air dry – you don’t want water on your asparagus to end up steaming your vegetables!
  4. Lay asparagus on a large baking try, and drizzle with olive oil
  5. Toss to coat
  6. Spread asparagus out, preferably not touching to allow the best air flow possible
  7. Sprinkle with salt
  8. Place in center of oven, and roast for 10-15 minutes until asparagus is just tender
  9. Remove from oven and serve hot
  10. Enjoy!
