Barbecued Meatballs

Ah, meatballs. You know, I’m mostly posting this recipe to make my sister’s mouth water. She loves these things. So do I, for that matter. Gabriel and I usually serve them over rice with a side of salad, and/or sweet potatoes.

These meatballs are super easy to prepare in large batches and make great freezer meals. I figured out how many meals Gabriel and I eat in a meal, divided them into quart-sized zip-top bags, laid them out flat, and froze them. Now all I have to do is pop a bag out of the freezer and dump it in a skillet with a bit of water, cover, heat, and eat. Easy!

These gluten-free barbecued meatballs are a great appetizer or main dish. You’re whole family will love them.

Ingredients

Scale
  • 3 lbs. ground beef
  • 1/2 chopped onion
  • 1 /12 cups milk
  • 1/2 t. garlic powder
  • 2 cups Gluten-Free oatmeal
  • 1/2 t. pepper
  • 2 eggs
  • 2 t. salt

Instructions

  1. Mix all ingredients well.
  2. Roll into 1 inch balls.
  3. Place on cookie sheet and bake at 350 thirty minutes or until done.
  4. Pour barbecue sauce over meatballs (recipe follows) and serve over rice.
