Ah, meat balls. You know, I’m mostly posting this recipe to make my sister’s mouth water. She loves these things. So do I for that matter. Gabriel and I usually serve them over rice with a side of salad, and/or sweet potatoes.
These meatballs are super easy to prepare in large batches and make great freezer meals. I figured up how many Gabriel and I eat in a meal, divided them into quart-sized zip-top bags, laid them out flat, and froze them. Now all I have to do is pop a bag out of the freezer and dump them in a skillet with a little water, cover, heat, and eat. Easy!
Barbecued Meatballs
Barbecued Meatballs
These gluten-free barbecued meatballs are a great appetizer or main dish. You’re whole family will love them.
Ingredients
- 3 lbs. ground beef
- 1/2 chopped onion
- 1 /12 cups milk
- 1/2 t. garlic powder
- 2 cups Gluten-Free oatmeal
- 1/2 t. pepper
- 2 eggs
- 2 t. salt
Instructions
- Mix all ingredients well.
- Roll into 1 inch balls.
- Place on cookie sheet and bake at 350 thirty minutes or until done.
- Pour barbecue sauce over meatballs (recipe follows) and serve over rice.
Barbecue Sauce
This sweet and tangy barbecue sauce is great when paired with the gluten-free meatballs.
Ingredients
- 2c. Ketchup
- 1/2 t. garlic powder
- 1 c. brown sugar (or evaporated cane juice)
- 1/2 liquid smoke
Instructions
- Combine all ingredients and cook over medium heat, stirring until sugar is dissolved.
- Continue cooking until sauce is thick.
- Add meatballs and stir gently while heating through.
- Enjoy!
