English Muffin Pizza

Sometimes you just need an easy dinner. One that takes no time at all to prepare. And that’s exactly when you need this easy english muffin pizza recipe!

It’s incredibly simple, and great for a build-your-own night with kids and guests. These are great for a snack or a meal, and can be made in a toaster oven, air fryer, or traditional oven. 

Year ago, I started making gluten-free english muffins for my husband who has celiac disease, and they were a big hit with the whole family. We started out with the idea of just using them for egg and cheese breakfast sandwiches, but have expanded since then, of course. 

They’re such an easy gluten-free bread to make, so why not! 

And of course, this isn’t to exclude those of use without food allergies; you can use any english muffin you want! From homemade to store bought. Whole wheat muffins are popular for their rich flavor.

Like with most pizzas, there are the basic ingredients, then you can use as many or as few toppings as you want. 

My kids are pretty hardcore sauce, cheese, and pepperoni only kids, but I like to put out a smorgasbord of toppings and spice things up a little. 

The base: 

  • English muffins
  • Olive oil
  • Tomato sauce sauce – you can use marinara, spaghetti or pizza sauce, or whatever your favorite is!
  • Cheese – I usually use a mix of shredded mozzarella cheese and parmesan cheese. A little asiago or cheddar cheese can also be a nice addition. A little bit of pepper jack is also nice for a little kick. 

The toppings: 

  • Pepperoni slices – mini, or regular-sized that have been cut into quarters
  • Sausage crumbles 
  • Onions
  • Bell peppers
  • Basil
  • Pickled banana peppers
  • Pepperoncinis
  • Black olives
  • Mushrooms
  • Bacon
  • ham
  • pineapple
  • Pickled Jalapeños
  • Garlic
  • Oregano
  • And whatever else makes your pizza loving hear happy. 

One tip for the best english muffin pizzas

If there’s one part of this article you read, make it this one!

The biggest trick to making a good mini pizza is olive oil and hot oven. 

Here’s the deal: When you spread sauce on a bare english muffin, it starts to soak in and make your crust soggy.

What to do instead: Spray, or brush your split english muffin with olive oil, and stick in the oven at 475º, or in the broiler for a few minutes until the edges just barely start to brown. 

This will lightly toast the muffin, giving you the firmer, chewier texture for a crust.

After this step, you can move forward to adding your toppings. 

Does this take a few extra minutes? Yes, but it’s so worth it! 

Assembling the pizzas

After toasting the split muffins, it’s time to top them with your pizza toppings. 

If you’re doing a buffet-style assembly, toast your muffins first, and pile them up at the head of the line. It doesn’t matter if they get cold – they’re still soggy-proof. 

Preheat your oven to 425º

One each or the english muffin halves, spread about a tablespoon of sauce (you’ll need about 2 tablespoons of pizza sauce per muffin).

Then lightly sprinkle with your choice of cheese.

Then move on to your toppings, adding what ever you like.

Finally, Place the pizzas on a baking sheet, and bake them in the center of your preheated oven until the cheese begins to bubble – about ten minutes. 

Remove them from the oven and serve.

By the way, this is very similar to how we make eggplant pizzas, which is a great way to serve vegetables!

Can I make these ahead of time? 

Yes. I recommend assembling them, and then partially baking them. 

When you’re ready to serve them, just proceed with baking them at 425º for about ten minute until the cheese is melted and beginning to show some flecks of brown. 

You can also freeze them by assembling and freezing them in a single layer on a baking sheet, then packaging them into an airtight freezer bag or container. Put them in the oven directly from the freezer when ready to serve. Just add an extra five to ten minutes to the baking time.

How to store leftovers

Let the pizzas cool completely, then store in an airtight container in the refrigerator for put to five days. These make an excellent school lunch – even cold!

To reheat, bake them for 5-10 minutes, or reheat in the microwave.

  • English Muffins
  • Pizza Sauce (2 Tablespoons per muffin)
  • Shredded Mozzarella Cheese, or your preferred cheese blend (1/4 cup per muffin)
  • Olive oil

Toppings: 

  • Pepperonis
  • Olives
  • Mushrooms
  • Bell peppers
  • Onions
  • Basil
  • Etc.

Instructions

  • Set oven to 475º
  • Split english muffins, and spray, or lightly brush the cut side with olive oil
  • Place on a baking sheet, split side up in the center of oven (note: I like to line sheet with parchment paper for easy cleanup)
  • Bake for about 5 minutes, until the muffin is lightly toasted
  • Remove muffins from oven, and turn heat down to 425º
  • Spread about 1 tablespoon of sauce onto each muffin half, then sprinkle with 2-3 tablespoons cheese
  • Sprinkle with desired toppings
  • Place back in oven for about 10 minutes, until the cheese is melted, and the edges begin to brown
  • Remove from oven, and sprinkle with a little basil for extra pizzazz.
  • Enjoy!
