Gluten-Free Banana Cookies
Cookies. Is it all kids, or just mine that love cookies? I mean, it doesn’t matter what kind of cookie, just the fact that it’s a cookie makes it the best thing ever.
I have to agree with them though, I like cookies pretty well myself, and these cookies are pretty tasty! We love all kinds of gluten-free cookies.

We seem to occasionally find ourselves inundated with overripe bananas, and while I LOVE gluten-free banana bread, it takes much longer to bake, and sometimes, you just want something a little different, ya know?
So, you make what is basically banana bread in cookie form.
Tastes yummy + easy for the kids to snack on = total mom win.
This recipe makes a pretty big batch, but even so, between the kids, my husband, and well, myself (ahem), they didn’t last the day.
Recipe officially added to the family repertoire.

Give these cookies a try- unique flavor, and gluten-free for your dietary needs
Ingredients
- 1¼ cups sugar
- 2/3 cup butter
- 1 teaspoon vanilla
- 1 cup banana, mashed
- 2 Eggs, beaten
- 21/2 cups gluten-free flour mix
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 400º
- In small bowl, combine flour, baking powder, baking soda, and salt and 1/2 teaspoon of cinnamon.
- Cream sugar, butter, and vanilla until light and fluffy.
- Add eggs and beat well.
- Stir in banana.
- Slowly mix dry ingredients into wet.
- Drop teaspoon sized balls of dough two inches apart on greased cookie sheets.
- Bake 8-10 minutes or until browned.
- Let cool slightly, remove from cookies sheets, and cool on wire racks.
- Enjoy!
The gluten-free banana cookies are delicious. I followed the instructions other than halving the recipe as I only had a small banana to work with.
The cookies are moist and have just the right amount of sugar.
