My kids ask for pancakes nonstop. Every morning, I look at my meal plan with the intent to make whatever’s on it that morning – something easy on the week days, something fun on the weekends. 

But the kids, especially my daughter, every morning ask if we can switch to pancakes instead. 

This has lead to me making pancakes a little more often lately than I normally would, and looking for ways to make pancakes that are a little more healthy, and a little less dessert-for-breakfast. 

It’s honestly not as hard as you might think to make healthier pancakes – it can be as easy as three-ingredient banana pancakes, or as traditional as coconut flour pancakes

But what about protein pancakes? That, for me, is the main lack when it comes to making pancakes for breakfast. You have to have protein with your breakfast!

Carbs are great, but balance is essential, and with pancakes, you already have carbs in your toppings like strawberry syrup, so where better to put that protein than in the pancake itself? 

Adding this protein, and substituting oatmeal for flour in these banana oat pancakes makes me feel so much happier to feed my kids pancakes in the morning because I know they’re getting good nutrition in their tasty treat instead of empty, sugar-filled carbs. 

My kids are thrilled to get pancakes more often these days, and they love the banana flavor in this particular recipe. The bananas replace the sweetness of the sugar, sure, but they’re also the perfect pairing with blueberry syrup

I also personally love the slightly salty, cottage cheese flavor these pancakes bring. It’s hard to beat a rich, tasty breakfast like these banana oat pancakes!

Banana Oat Pancakes with Cottage Cheese

Ingredients

Scale
  • 2 bananas
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup cottage cheese
  • 3/4 cup rolled oats

Instructions

  1. Combine all ingredients in a blender

  2. Blend until smooth
  3. Bake on griddle, flipping when first side is nicely browned

  4. Remove to plate, and serve with toppings of choice
  5. Enjoy!
