Paleo Chocolate Cupcakes with Coconut Flour

These delicious paleo chocolate cupcakes taste so good, you won’t even believe they’re paleo!

Ingredients

Scale
  • 1/4 cup olive oil
  • 3 eggs, beaten
  • 1/2 cups honey
  • 1 teaspoon vanilla
  • 1/3 coconut flour
  • 2 Tablespoons cocoa
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 350ยบ
  2. Mix oil, eggs, honey, and vanilla together
  3. Combine dry ingredients (numbers 5-8 on the ingredient list)
  4. Fold dry ingredients into wet ingredients and mix well.
  5. Grease 6 muffin cups, or line with paper liners
  6. Divide batter between muffin cups
  7. Bake for 18-20 minutes
  8. Remove from oven and allow to cool 5 minutes before removing from muffin tin.
  9. Then allow to cool completely before icing.
