Grain-Free Apple Cinnamon-Spice Muffins

If you love apple cinnamon, these grain-free apple cinnamon spice muffins are so delicious!




  1. Preheat oven to 350º
  2. Whisk oil sugar, salt, vanilla, eggs, and milk.
  3. Mix coconut flour, baking powder cinnamon, and nutmeg.
  4. Add flour mixture to egg mixture, and stir to combine well.
  5. Stir in chopped apple
  6. Grease a dozen muffin cups, or line with paper cupcake liners.
  7. Fill each liner to about 1/4 inch from the top.
  8. Bake the muffins on the center rack of the oven for 20-25 minutes, until muffins are slightly brown on tip, and don’t give too much when poked.
  9. Remove the muffins from oven. Let them cool for five minutes before removing from the pan to finish cooling on a wire rack.
  10. Serve with butter, or a dusting of powdered sugar. Yum!
