For the Cake Layer:
- 1 1/2 cups gluten-free flour mix
- 1 teaspoon of guar or xanthan gum IF your mix does not already contain it (read ingredients!)
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 2 eggs, beaten
- 1 teaspoon vanilla
For the Cheesecake Layer:
- 1 brick (8oz.) Cream cheese at room temperature
- 2 eggs
- 1/2 cup cocoa powder
- 2 cups powdered sugar
