These delicious buckwheat cookies are so simple and easy to customize. You will love them!

Ingredients

  • 1/2 cup butter
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 tsp. vanilla
  • 1 egg
  • 3/4 cup buckwheat flour
  • 1/2 cup cornstarch
  • 1/2 cup rice or corn flour
  • 1 tsp baking powder
  • 1 tsp guar or xanthan gum
  • 1/4 tsp salt
  • 1 cups add-in (such as chocolate chips, nuts, craisins, etc.)

Instructions

  1. Preheat oven to 375º.
  2. Cream together butter and sugars. Add egg and vanilla and mix well.
  3. Mix dry ingredients together and add to butter/egg/sugar mixture.
  4. Stir well.
  5. Mix in your add-ins if you’re using any.
  6. Place by the spoonful onto an ungreased cookie sheet and bake 7-12 minutes, until the edges are just beginning to turn golden.
  7. Cool on wire rack. Devour.
  8. Enjoy!
