Gluten-Free Buckwheat Cookies Recipe

These delicious buckwheat cookies are so simple and easy to customize. You will love them!
- 1/2 cup butter
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1 tsp. vanilla
- 1 egg
- 3/4 cup buckwheat flour
- 1/2 cup cornstarch
- 1/2 cup rice or corn flour
- 1 tsp baking powder
- 1 tsp guar or xanthan gum
- 1/4 tsp salt
- 1–1½ cups add-in (such as chocolate chips, nuts, craisins, etc.)
- Preheat oven to 375º.
- Cream together butter and sugars. Add egg and vanilla and mix well.
- Mix dry ingredients together and add to butter/egg/sugar mixture.
- Stir well.
- Mix in your add-ins if you’re using any.
- Place by the spoonful onto an ungreased cookie sheet and bake 7-12 minutes, until the edges are just beginning to turn golden.
- Cool on wire rack. Devour.
