Strawberry Sugar Cookies

Ingredients

For the cookies:

  • 2 cups all purpose flour or gluten-free flour mix
  • 1 teaspoon xanthan gum if using a gluten free flour mix that doesn’t already contain gum (otherwise, leave if out)
  • ¾ teaspoon baking powder
  • ⅔ cup granulated sugar
  • ½ cup butter, softened
  • 1 egg
  • 1 1/2 teaspoons strawberry extract
  • 12 tablespoons milk

For the icing: 

  • 1 cup powdered sugar
  • 2 strawberries
  • 2 Tablespoons melted butter

Instructions

  1. preheat oven to 350º
  2. in a large bowl, mix flour, xanthan gum (if using), baking powder, and sugar.
  3. Combine well.
  4. Add butter, egg, 1 tablespoon of milk, and vanilla.
  5. Mix dough until if comes together, adding the second tablespoon of milk if necessary.
  6. Dough will be stiff.
  7. Roll into walnut-sized balls, and place on uncreased cookie sheet 3 inches apart
  8. Press each ball with a small (half-pint) jar or glass until about 1/4 inch thick
  9. Bake in center of oven for 7-10 minutes until the edges just begin to brown.
  10. Remove cookies from oven, and allow to cool until set.
  11. Transfer to a wire rack, and let cool completely.
  12. To make icing: blend or mash strawberries, and beat together with powdered sugar and butter
  13. Once cookies are cool, top each with a dollop of icing, and spread with a knife
  14. Enjoy!
