Ingredients
Scale
1 lb sweet potatoes (about 3, smallish)
3/4 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 Tablespoon coconut oil (expeller pressed if you prefer no taste)
4 eggs
Instructions
Preheat oven to 450º
Peel and spiralize sweet potatoes
Toss with spices and oil
divide into four “nests” on a cookie sheet
Bake for 10 minutes
Remove from oven, and crack an egg into the middle of each nest
Return to oven and bake for an additional 8 minutes – less if you like your yolk runny, more if you like it solid. 8 minutes will give you soft, but not runny yolks as shown in the picture above.
