Simple Sweet Potato Egg Nests

If you’re looking for a new, and healthy breakfast option, these simple sweet potato egg nests are for you!

Ingredients

Scale
  • 1 lb sweet potatoes (about 3, smallish)
  • 3/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 Tablespoon coconut oil (expeller pressed if you prefer no taste)
  • 4 eggs

Instructions

Preheat oven to 450º

  1. Peel and spiralize sweet potatoes
  2. Toss with spices and oil
  3. divide into four “nests” on a cookie sheet
  4. Bake for 10 minutes
  5. Remove from oven, and crack an egg into the middle of each nest
  6. Return to oven and bake for an additional 8 minutes – less if you like your yolk runny, more if you like it solid. 8 minutes will give you soft, but not runny yolks as shown in the picture above.
  7. Remove from oven, serve, and enjoy!
