No churn ice cream swirled with buttery peach cobbler. This delicious ice cream is easy to make, and the perfect combo of fruity and creamy for summer!

Ingredients

Scale

For the cobbler:

  • 1/4 cup butter (1/2 a stick)
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 Teaspoon vanilla
  • 1/2 cup milk
  • 1 1/2 cups sliced peaches (can use fresh, frozen, or canned)

For the ice cream:

  • 1 12 oz. can of sweetened condensed milk
  • 2 cups (1 pint) heavy whipping cream
  • 2 teaspoons peach flavoring or vanilla

Instructions

To make the cobbler:

  1. Preheat oven to 350º
  2. Melt butter in 8 inch skillet, or small baking pan such as a bread pan
  3. While butter is melting, combine flour, sugar, baking powder, and salt
  4. Add milk and vanilla
  5. Pour over melted butter
  6. Arrange peach slices over batter
  7. Bake for about 25 minutes, until edges of the cobbler are golden, and middle is set
  8. Remove and let cool completely

For the ice cream:

  1. While the cobbler is cooling, beat cream and peach flavoring together until stiff peaks form
  2. Fold in sweetened condensed milk
  3. When the cobbler is cool, cut into small pieces – about 1/2 an inch
  4. Fold into ice cream mixture
  5. Pour mixture into a freezer-safe container (I use a 9×5 bread pan because it fits in my freezer the best)
  6. Freeze for at least 8 hours
  7. Serve in bowls or cones as desired
  8. Enjoy!
