This tasty, one-pan sweet potato hash is super easy, and also delicious!

1/2 of a large red onion, diced
3 cups peeled, diced sweet potatoes
2–3 large kale leaves, de-stemmed and chopped (about one cup)
Salt and pepper to taste

Cook Mode Prevent your screen from going dark

Instructions

Put large skillet over medium heat
Add lard and let melt
Next, add sausage, and stir-fry with onions until just barely brown enough to be safely called done
Add sweet potatoes, salt, and pepper
Continue stir-frying until potatoes are just tender
Add kale and stir-fry until kale is wilted
Remove from heat and serve
