One-Pan Sweet Potato Hash

Ingredients

Scale
  • 3 Tablespoons Armor Premium All-Natural Lard
  • 3/4 pound of sausage or kielbasa (the sausage I use is really lean, so keep that in mind when you’re adding fat to your skillet later)
  • 1/2 of a large red onion, diced
  • 3 cups peeled, diced sweet potatoes
  • 23 large kale leaves, de-stemmed and chopped (about one cup)
  • Salt and pepper to taste

Instructions

  1. Put large skillet over medium heat
  2. Add lard and let melt
  3. Next, add sausage, and stir-fry with onions until just barely brown enough to be safely called done
  4. Add sweet potatoes, salt, and pepper
  5. Continue stir-frying until potatoes are just tender
  6. Add kale and stir-fry until kale is wilted
  7. Remove from heat and serve
  8. Enjoy!
