Lemon Garlic Chicken Thighs

Ingredients

  • 6 chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3 Tablespoons butter
  • 4 garlic cloves, minced
  • zest of 1 lemon
  • juice of 1 lemon
  • 1/2 cup chopped fresh parsley
  • 3 cups brocoli florets

Instructions

  1. Preheat oven to 450º
  2. Place chicken thighs in a baking dish
  3. Stir paprika, onion powder, pepper, and salt together
  4. Sprinkle over chicken thighs
  5. Melt butter and garlic together, and simmer for 45-60 seconds
  6. Spoon over chicken, and brush to completely coat chicken
  7. sprinkle with lemon zest, and squeeze juice over the chicken
  8. Bake in center of oven for 15 minutes
  9. Remove from oven and add broccoli
  10. Brush broccoli with oil or butter, or spray with cooking spray (I use olive oil spray)
  11. Place back in oven and bake another 15-20 minutes until chicken is done through, and broccoli is tender
  12. Remove from oven, and garnish with more parsley if desired, and serve
  13. Enjoy!
