Healthy Breakfast Cookies

Ingredients

  • 2 cups quick cooking oatmeal
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup peanut butter (or almond, or sun butter)
  • 1/4 cup honey
  • 1/4 cup apple sauce
  • 1 large, overripe banana (about 1/2 cup)
  • 1 cup raisins

Instructions

  1. Preheat oven to 350º
  2. Combine all of the ingredients into the bowl of a stand mixer (or mix by hand – just make sure your banana is pre-mashed!). Mix until all of the ingredients are combined. The dough will be fairly stiff.
  3. Drop heaping Tablespoons of dough onto ungreased cookie sheet.
  4. Slightly flatten the tops into desired thickness. The cookies will not spread in the oven.
  5. Bake for 10-12 minutes or until edges are slightly brown.
  6. Remove from cookie sheets while cookies are still warm, and finish cooling on a wire rack.
  7. Cookies stay fresh at room temperature for several days, or freeze in airtight containers for up to 3 months.
