Ingredients

For the Tuna Balls:

  • 2 cans Bumble Bee® Solid White Albacore Tuna
  • 1 egg, beaten
  • 2 Tablespoons paleo flour blend or almond flour
  • 1/4 teaspoon sea salt
  • 1 Tablespoon chopped chives or parsley
  • Dash of pepper
  • 1/4 cup paleo flour for coating

For the Zoodles: 

  • 2 Zucchini
  • 1 teaspoon olive oil
  • 1 teaspoon or 2 cloves of chopped garlic
  • Salt and pepper to taste

Instructions

For Tuna Balls:

  1. Preheat oven to 425º
  2. Drain tuna and place in a mixing bowl
  3. Add egg and mix
  4. Add remaining ingredients and mix
  5. Roll into 12 walnut-sized balls
  6. Dredge in paleo flour
  7. Arrange on cookie sheet
  8. Place in oven and bake for 10 minutes

For Garlic Zoodles:

  1. While Tuna is baking, Spiralize or julienne both zucchini
  2. Toss with olive oil, salt, and pepper
  3. Transer for a skillet and sautée while stirring
  4. As the zoodles begin to steam, add chopped garlic
  5. Continue cooking until zucchini is crisp-tender
  6. Remove from heat
  7. When tuna balls are lightly browned, remove from oven, and arrange on plates with garlic zoodles.
  8. Optional: Top with marinara sauce
  9. Enjoy!
