Gluten-Free Gingersnaps Recipe

These tasty gingersnap cookies taste like a bit of nostaligia.
- 1 cup granulated sugar
- 1/2 cup light olive oil
- 2 large eggs
- 1/4 cup unsulphered molasses
- 1 teaspoon vanilla extract
- 2 ¾ cup gluten free flour mix
- 2 teaspoons baking soda
- 1 teaspoon guar gum
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/3 cup granulated sugar (for rolling cookies in)
Preheat oven to 375º
- Whisk together sugar, oil, eggs, molasses, and vanilla.
- Mix flour, soda, gum, spices, and salt together in a separate bowl.
- Add to wet ingredients and mix well.
- Roll dough into teaspoon sized balls.
- Roll in granulated sugar, and flatten in 1/8– ¼ inch discs.
- Place on and ungreased cookie sheet and bake 8-10 minutes.
- Let cool a few minutes before removing cookies from cookie sheet, and placing them on a wire rack to cool.
