These tasty gingersnap cookies taste like a bit of nostaligia.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light olive oil
  • 2 large eggs
  • 1/4 cup unsulphered molasses
  • 1 teaspoon vanilla extract
  • 2 ¾ cup gluten free flour mix
  • 2 teaspoons baking soda
  • 1 teaspoon guar gum
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar (for rolling cookies in)

Instructions

Preheat oven to 375º

  1. Whisk together sugar, oil, eggs, molasses, and vanilla.
  2. Mix flour, soda, gum, spices, and salt together in a separate bowl.
  3. Add to wet ingredients and mix well.
  4. Roll dough into teaspoon sized balls.
  5. Roll in granulated sugar, and flatten in 1/8– ¼ inch discs.
  6. Place on and ungreased cookie sheet and bake 8-10 minutes.
  7. Let cool a few minutes before removing cookies from cookie sheet, and placing them on a wire rack to cool.
