Gluten Free Chocolate Muffins

  • 1 1/4 cups gluten free flour blend
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon instant coffee (optional, but adds to the richness of the chocolate flavor)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/3 cup light tasting oil
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1 1/4 cups chocolate chips


  1. Preheat oven to 350º
  2. In a large mixing bowl, combine flour, sugar, cocoa, instant coffee, baking soda, and salt
  3. Make a well in the center, and add the eggs. Whisk them quickly to break up the yolks and whites
  4. Add oil, vanilla, and milk
  5. Stir until just combined
  6. Stir in 1 cup of chocolate chips
  7. Divide batter between 12 paper-lined or greased muffin tins
  8. Top with remaining chocolate chips 
  9. Bake in preheated oven for 18-20 minutes until a toothpick inserted in the center comes out clean
  10. Remove from oven and let cool on a wire rack a few minutes (or completely) before serving
