Easy Skillet Cilantro Lime Chicken

- 1–2 Tablespoons olive oil
- 4–6 chicken thighs, 2-3 leg quarters, or equivalent 1lb chicken breasts
- 2 teaspoons paprika
- 1/2–1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1/4 cup lime juice
- 1 lime
- 1/2 cup chopped cilantro
- Heat olive oil in a large skillet
- Place chicken in skillet skin side up and sprinkle with lime juice and seasonings
- Slice lime thinly and layer slices on and around chicken
- Cover skillet and cook over medium heat for 10-12 minutes if using thighs or legs, or 5-7 minutes for thinner boneless, skinless chicken breasts
- Remove lid and flip chicken. Cook on second side for another 10-12 minutes until skin is crisped, and chicken in done inside.
- Flip chicken again so the crisp skin side is up
- Garnish with cilantro and serve
