Easy Skillet Cilantro Lime Chicken

Ingredients

  • 12 Tablespoons olive oil
  • 46 chicken thighs, 2-3 leg quarters, or equivalent 1lb chicken breasts
  • 2 teaspoons paprika
  • 1/21 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/4 cup lime juice
  • 1 lime
  • 1/2 cup chopped cilantro

Instructions

  1. Heat olive oil in a large skillet
  2. Place chicken in skillet skin side up and sprinkle with lime juice and seasonings
  3. Slice lime thinly and layer slices on and around chicken
  4. Cover skillet and cook over medium heat for 10-12 minutes if using thighs or legs, or 5-7 minutes for thinner boneless, skinless chicken breasts
  5. Remove lid and flip chicken. Cook on second side for another 10-12 minutes until skin is crisped, and chicken in done inside.
  6. Flip chicken again so the crisp skin side is up
  7. Garnish with cilantro and serve
  8. Enjoy!
