- 1 lb pork or turkey sausage
- 1 onion, chopped
- 1 teaspoon minced garlic
- 1/2 head of cabbage, chopped
- 2–3 carrots, sliced or shredded
- 2 Tablespoons soy sauce (or liquid aminos)
- 1 teaspoon minced ginger
- 1 Tablespoon rice vinegar
- Salt and pepper
- 2 tablespoons sliced green onions
- 1 1/2 cups uncooked rice
- Prepare rice according to package instructions
- Meanwhile, in a large skillet, brown sausage, adding onions about half way through
- Drain sausage if necessary (if you’re using a relatively lean sausage, you may be able to skip this step)
- Add remaining vegetables (garlic, cabbage, carrots), and stir fry
- Season to taste with soy sauce, ginger, rice vinegar, salt, and pepper
- Serve with rice
- Garnish with green onions
