Healthy Egg Roll in a Bowl recipe

Ingredients

  • 1 lb  pork or turkey sausage
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1/2 head of cabbage, chopped
  • 23 carrots, sliced or shredded
  • 2 Tablespoons soy sauce (or liquid aminos)
  • 1 teaspoon minced ginger
  • 1 Tablespoon rice vinegar
  • Salt and pepper
  • 2 tablespoons sliced green onions
  • 1 1/2 cups uncooked rice

Instructions

  1. Prepare rice according to package instructions
  2. Meanwhile, in a large skillet, brown sausage, adding onions about half way through
  3. Drain sausage if necessary (if you’re using a relatively lean sausage, you may be able to skip this step)
  4. Add remaining vegetables (garlic, cabbage, carrots), and stir fry
  5. Season to taste with soy sauce, ginger, rice vinegar, salt, and pepper
  6. Serve with rice
  7. Garnish with green onions
  8. Enjoy!
