Peel potatoes and slice to about 1/4-1/3 inch thickness
Place potatoes on baking tray, and drizzle with oil
Toss until potatoes are evenly coated
Arrange on baking tray(s) so that potatoes do not touch each other. You can get them really close, but any touching is going to result in soft potatoes instead of crispy fries. You need air flow!
Bake for 15 minutes, flip if desired, and bake for an additonal 10-15 minutes until potatoes are done through, and have reached the desired level of crispness
Remove from oven and serve with desired condiments.
