Creamy Cucumber Salad Recipe
If you enjoy refreshing summer dishes, you will love this creamy cucumber salad recipe! The fantastic crunch, mixed with a tangy, garlicky dressing is perfect for a picnic.
One thing I always make sure to do in the summer is grow too many cucumbers. When you pick them young, they have such a nice crunch, and not only are they great for making amish bread and butter pickles, and our favorite homemade dill pickles, they’re a great snack.
The kids and I like to slice them and eat them with salt, and I absolutely love using them to make simple salads. This creamy cucumber salad is my favorite of those.
Full of flavor from sour cream, lemon, and garlic, with the added pizazz of red onion. It’s just perfect.
Ingredients for Creamy Cucumber Salad
- Cucumbers – the best ones are baby cucumbers, but mature cucumbers work well when you deseed them first.
- Red onion – Because it’s such a nice flavor and crunch.
- Sour cream for flavor and creaminess.
- Milk or cream to thin it down.
- Olive oil for flavor and added creaminess.
- Lemon juice for flavor.
- Salt and pepper for more flavor.
Additions and Substitutions
As always, because it’s essentially a salad dressing over a couple vegetables, you can adjust, add, and subtract ingredients to your taste. Just be aware that it’s your own recipes when you start doing that, and keep ratios in mind – the ratios of thick sour cream, to thinner milk and lemon juice, etc. work together to create the proper viscosity for a creamy dressing.
Easy swaps are: Greek yogurt in place of sour cream, sweet onions instead of red onion, white wine vinegar in place of lemon juice.
Some awesome additions: 1-2 teaspoons fresh dill weed, or other fresh herbs such as parsley or basil, 1/2 teaspoon crushed red pepper, 1/2 cup diced tomatoes, 1/2 cup chickpeas, 8 oz. chopped or shredded chicken, 1 chopped avocado.
How to make creamy cucumber salad
- Slice cucumbers about 1/8 inch thick using a sharp knife, or mandolin. If you’re using an english cucumber, or larger cuke, you may want to split them in half, and scoop out the seeds.
- Slice onion thinly, and place in a large bowl with the cucumber.
- In a smaller mixing bowl, combine sour cream, salt and pepper, lemon juice, oil, garlic, and milk.
- Drizzle dressing over cucumbers and onions, and stir to combine.
- Store in the fridge until ready to use.
- Re-toss to combine any dressing that has settled in the bottom of the container before serving.

Creamy Cucumber Salad Recipe
Ingredients
- 4 baby cucumbers, or 2 english cucumbers
- 1/2 cup sour cream (can also use plain greek yogurt)
- 2 Tablespoons milk
- 2 Tablespoons lemon juice
- 1 Tablespoon olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Wash the cucumbers and trim off the ends
- Slice into 1/16-1/8 inch slices
- Peel onion, and cut in half from stem end to root
- Slice into 1/8 inch slices, and add to a large bowl with the cucumber
- In a smaller mixing bowl, combine sour cream, milk, lemon juice, olive oil, garlic, and salt and pepper and mix well
- Drizzle over cucumbers and onions, and toss to combine
- Store in an airtight container in the refrigerator until ready to serve
- Before serving, toss salad again, to redistribute dressing
- Enjoy!
