Looking for a cool treat before we head into pumpkin season? These coconut-lime popsicles are perfect!

He’s been on the Specific Carbohydrate Diet for a while.
You know those graphics that show two overlapping circles? In this case, on the left you would have foods allowed on the SCD diet, and on the right, foods that Gabe isn’t allergic to.
In the middle, where they overlap are things he can eat, and there really aren’t very many of them, espcially when it comes to desserts/sweet treats.
So while I usually make easy, tasty, mostly healthy recipes like this for the kids snacks, this one was made specifically with him in mind.
Gabe loves both coconut and lime plus, and it’s been really hot out lately, so these coconut lime popsicles were perfect this week to cool off between working on the house (which of course has no air conditioner yet), or working outside at the farm.
Three ingredients, Cold, just a little bit sweet, so refreshing, and most importantly, SCD legal.
Of course, I let the kids each have one popsicle and they loved them, so I had to make it clear that these were daddy’s popsicles and not for them. They can have berry parfait popsicles, or green smoothie pops.
PrintCoconut-Lime Popsicles Recipe
Ingredients
- 1 can coconut milk
- 3–4 Tablespoons honey (for SCD) or maple syrup
- 1/4 cup lime juice
- Optional: 1 Teaspoon lime zest
Instructions
- Mix all ingredients together and pour into popsicle mold
- Freeze mold 12-18 hours or overnight.
- Enjoy!
