Delicious grain-free cookies made with coconut flour.

Ingredients

  • 1/3 cup coconut flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 Tablespoons Truvia Brown Sugar sweetener
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 melted and cooled butter or coconut oil
  • 2/3 cup chocolate chips or other add ins such as dried fruit (chopped), nuts, etc.

Instructions

  1. Preheat oven to 350º
  2. Combine coconut flour, salt, baking soda, and Truvia in a large mixing bowl
  3. Add eggs, and whisk on top of the flour, no into the flour – you just want to break them up
  4. Add vanilla and butter, and stir together until fully combined
  5. Stir in chocolate chips
  6. Scoop by the tablespoon, and roll into balls, flatten to about 1/2 inch thick
  7. Place on a parchment-lined baking sheet, and bake in preheated oven for 10-12 minutes until cookies are beginning to brown on the edges, but centers are still soft
  8. Remove from oven and let cool
