Instructions

Preheat oven to 350ยบ

  1. Brown ground beef
  2. Drain and mix with cheese and pickles
    filling mixture for cheeseburger enchiladas
  3. In a 8-10 inch skillet, heat 1 cup of water to a simmer
  4. Stir in chili powder
  5. Quickly dip a tortilla in chili bath, coating both sides with chili
    dipping tortillas in the chili bath for enchiladas
  6. Remove to a plate, add about 1/2 cup of cheeseburger mixture to center of tortilla and roll
    cheeseburger enchilada being filled
  7. Place rolled enchilada in a baking dish
  8. Continue coating and rolling enchiladas, adding more chili powder and water as needed until filling is gone
  9. Cook down any leftover chili bath to make a thin paste, and top enchiladas with it and shredded cheese if desired
  10. Bake enchiladas for 15-20 minutes until heated through and cheese begins to bubble
