Cheeseburger Enchiladas

- 1 lbs ground beef or turkey
- 8 oz. shredded American or mild cheddar cheese (my mother used American, but as a real food enthusiast, I only buy it for super special indulgences.
- 1/2 cup chopped dill pickles
- 2–3 Tablespoons chili powder (Plus more as needed)
- Hot water
- 6–8 8″ tortillas
Instructions
Preheat oven to 350º
- Brown ground beef
- Drain and mix with cheese and pickles
- In a 8-10 inch skillet, heat 1 cup of water to a simmer
- Stir in chili powder
- Quickly dip a tortilla in chili bath, coating both sides with chili
- Remove to a plate, add about 1/2 cup of cheeseburger mixture to center of tortilla and roll
- Place rolled enchilada in a baking dish
- Continue coating and rolling enchiladas, adding more chili powder and water as needed until filling is gone
- Cook down any leftover chili bath to make a thin paste, and top enchiladas with it and shredded cheese if desired
- Bake enchiladas for 15-20 minutes until heated through and cheese begins to bubble
- Remove from oven and enjoy!
