This delicious blueberry syrup is the perfect addition to your breakfast plan.

Ingredients

  • 2 Cups fresh or frozen Blueberries
  • 1/2 cup cane sugar (to taste)
  • 1/4 cup cornstarch
  • 23 Tablespoons lemon juice (also to taste – some blueberries have more flavor than others)
  • 3 Cups water

Instructions

  1. Combine sugar and cornstarch
  2. Pour water into a sauce pan, and stir sugar/starch mixture in until there are no lumps
  3. Add blueberries
  4. Cook over medium heat, stirring, until syrup thickens and turns clear.
  5. Serve on pancakes or waffles
  6. Enjoy!
