Don’t let the name fool you, these Paleo brownies are delicious!

Instructions

  1. Pre-heat oven to 350 and lightly butter an 8×8 glass baking dish.
  2. In blender or food processor, puree beans, eggs, butter, cocoa, salt, vanilla and maple syrup, and arrowroot powder until smooth.
  3. Pour batter into prepared baking dish.
  4. Bake 30 minutes or until center is set.
  5. Cooking notes: Dry beans typically triple their volume so 2/3 cup of dry beans should equal about 2 cups cooked.
  6. The original also calls for chocolate chips and walnuts. Needless to say, those are expensive ingredients and I don’t (usually) use them.
