Apple Cinnamon Bread

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 1/2 cups apple, peeled, cored, and cut into 1/2 inch chunks (23 apples)

Topping:

  • 2 Tablespoons granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 325º
  2. In a small mixing bowl, combine flour, salt, baking powder, and cinnamon, and set aside
  3. In a larger mixing bowl, cream butter and sugars together until smooth
  4. Add eggs and vanilla and beat until fully incorporated
  5. Add half of the flour mixture, and mix until incorporated, then add the milk, and beat until smooth
  6. Repeat, adding the remaining flour mixture
  7. Finally, add the apple chunks to the mixture and stir until evenly distributed
  8. Spread batter into a greased or parchment-lined 9×5 inch loaf pan
  9. Combine 2 Tablespoons of granulated sugar with 1 1/2 teaspoons of ground cinnamon, and sprinkle over loaf
  10. Bake loaf in the center of a 325º oven for about 70 minutes, until a toothpick inserted into the middle comes out clean
  11. Remove from oven and let cool 5 minutes
  12. Loosen edges with a butterknife or icing spatula, and remove loaf from pan
  13. Let cool on a wire rack
  14. Slice and serve
