I love frittatas. Partly because we have waaaaay too many eggs right now (thanks, chickens), but also because a). they’re easy, and b). there are so many ways to change them up, they never get boring!

Though I like a lot more onion, spinach, tomatoes, and, you know, grown-up food in my frittatas than my kids do, frittatas are still one of their favorite ways to eat eggs. Why? Because when you start adding meat, herbs, and vegetables, the eggs become a fantastic carrier for all that flavor.

And guys? They make cheap dinners. Ground beef is fairly inexpensive when you get it on sale. Chicken if downright affordable.

But eggs? Eggs are the epitome of frugal protein.

And before you disagree, let me just say that eggs are kind of like violins; You can pay as much as you want to for them.

Although doubt you’ll pay less than $100 for a violin, and I doubt you’ll ever find $2,000 eggs, you get what I mean.

You can go to Aldi and find sixty-nine cents a dozen eggs, or go to Whole foods and blow your whole budget on organic, free range, etc. eggs. Either one is a perfectly legitimate choice depending on your goals.

But when it comes down to it, for budget-stretching, it’s hard to beat egg-based dinners!.

  1. They actually look like quiches to me! And they look delicious! I just don’t know if it would be a good idea to eat any of them when I have high cholesterol and high blood pressure.
