Ingredients

  • 1 large zucchini, shredded

  • 1/2 pound of breakfast sausage, cooked and crumbled (optional)

  • 6 eggs

  • 1 Tablespoon of onion powder

  • 14 teaspoon garlic powder

  • 1 tomato, sliced

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350º
  2. Combine all ingredients, beating eggs in with a fork
  3. Pour into a greased 8” baking dish
  4. Bake for 25 minutes or until set in the middle – it will still be moist from the zucchini, but shouldn’t be gooey from uncooked egg
  5. Remove from oven and let cool for 5-10 minutes before serving
  6. If desired, top with salsa, avocado, etc.
  7. Enjoy!
