Whole30 Zucchini Frittata

*If your kids don’t care for onion, substitute onion and oil with 3/4 teaspoon of onion powder

  1. Preheat oven to 375º
  2. Heat oil in a skillet and sauté onion until it becomes translucent
  3. Add the sausage to brown and crumble
  4. Meanwhile, beat eggs, and add seasonings.
  5. When sausage is cooked through, add to eggs along with shredded zucchini.
  6. Pour into a greased 8×8 inch pan
  7. Bake for 18-20 minutes until eggs are set in the middle
  8. Remove from oven and let rest for ten minutes before serving.
  9. Serve with salsa, guacamole, or your choice of topping.
  10. Enjoy!
