This recipe for strawberry baked oatmeal is a celebration of springtime and strawberry season! You’ll love how easy it is to make, and adore the fresh strawberry flavor.

I have a love-hate relationship with breakfast. 

Hate it because I don’t want to take time to eat in the morning. 

Love it because breakfast food is Life. 

If you, like me, struggle with taking the time for breakfast, but want to put a delicious dish on the table, this recipe is for you!

Bake oatmeal with strawberries is a match made in heaven, just like baked oatmeal and tight time schedules. 

Recipe for strawberry baked oatmeal

Because all it takes is a minute to mix up, and just let your oven do the rest. 

When it comes, out, your kids won’t be able to resist it – and you probably won’t either so… problem solved!

I like to serve with strawberry baked oatmeal topped off with a little greek yogurt for a hit of protein to start the day with. 

I admit, it’s still a little early for strawberry season where we live – but only just a little, so we’ve been making this recipe with last year’s frozen strawberries in an attempt to clean out the freezer and make room for this year’s bounty. 

Strawberry baked oatmeal with greek yogurt

We’re already out of sugar-free strawberry jam though, so I may use some of these frozen strawberries for that, as well as make gluten-free pancakes a few times with strawberry syrup (one of my childhood favorites!). 

Otherwise, to get them used up, we’ll probably swap our favorite pineapple out of our green smoothies and use strawberries there too. 

But honestly, right now, this is my favorite way to get those strawberries used up! 

Baked strawberry oatmeal batter

This strawberry baked oatmeal recipe is just the right blend of chewy, sweet, and fruity!

Strawberry Baked Oatmeal Recipe

Ingredients

  • 2 cups rolled oats
  • 1/2 cup sugar
  • 2 eggs, beaten
  • 2 cups milk
  • 1 teaspoon vanilla
  • 1 cups sliced strawberries

Instructions

  1. Preheat oven to 350º
  2. Combine all ingredients
  3. Pour into a greased 8×8 baking dish
  4. Bake for 20-25 minutes until set in center
  5. Let cool for 5 minutes before serving.
  6. Enjoy!
