Spinach Mashed Potatoes

Ingredients

  • 3 lbs of potatoes
  • 1/2 cup butter (1 stick)
  • 1 onion
  • 4 packed cups of spinach, roughly chopped
  • 1/2 cup sour cream
  • 12 cups milk, cream, or half and half
  • salt and pepper

Instructions

  1. Peel and roughly dice potatoes
  2. Cover with water in a large pot, and bring to a boil over medium heat
  3. Boil until tender
  4. While potatoes are boiling, melt butter in a heavy skillet
  5. Dice onion, and add to melted butter
  6. Sauté until onion is soft
  7. Add spinach and sauté, stirring, until spinach has wilted
  8. Remove from heat
  9. Once potatoes are done cooking, drain and mash, sprinkling generously with salt and pepper
  10. Mash in sour cream and milk/half and half/cream until desire consistency is reached
  11. Add in butter, onion, and spinach mixture and stir until well combined
  12. Serve hot.
