Simple roasted radishes recipe

If you’ve ever been hesitant to try radishes, give this recipe a chance. I am a convert myself!

Ingredients

Scale
  • 1 lb radishes
  • 1/2 large onion
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 23 sprigs of fresh thyme

Instructions

  1. Preheat oven to 425º
  2. Halve, and then quarter radishes
  3. Chop onion into 1/2-3/4 inch pieces
  4. Dump both radishes and onions onto parchment-lined baking sheet
  5. Drizzle with olive oil and toss to coat vegetables evenly
  6. Sprinkle with salt
  7. Top with thyme sprigs
  8. Place in oven and bake for 15-20 minutes depending on the size of your radishes – you’ll want to check them after 15 minutes if they’re on the small side. 
  9. Remove from oven once radishes are soft through the center, and slightly browned on the outside. 
  10. Serve as desired
