shoofly pie - a staple in lancaster county!

This traditional Amish pie is the perfect comfort food. Tasty and sweet, you’ll love it.

  • 1 9” pie shell
  • 1 cup of molasses (or agave if you don’t have access to molasses)
  • 3/4 cup hot water
  • 3/4 teaspoon baking soda
  • 1 egg, beaten
  • 1 1/2 cups of flour (all purpose, or gluten-free)
  • 1 cup brown sugar
  • 1/4 cup butter

  1. Preheat oven to 350º
  2. In a medium bowl, or food processor, combine flour and brown sugar
  3. But in butter until mixture resembles bread crumbs (this is easy to do by pulsing your food processor)
  4. Set aside
  5. In another medium blow, combine molasses, hot water, and baking soda. Stir well
  6. Whisk in beaten egg
  7. Pour into pie shell
  8. Sprinkle crumb mixture evenly over the top
  9. Place pie in the center of a jelly roll pan or rimmed baking sheet to catch any drips that happen while baking
  10. Bake in center of oven for 45 minutes. When the pie is done, it will no longer be watery, but may still jiggle slightly in the middle. Don’t worry! It will set up as it cools
  11. Enjoy!
