Sheet Pan Pork Chops

Easy seasoned sheet pan pork chops with sweet potatoes and broccoli. 

Ingredients

For the sweet potatoes:

  • 3 cups cubed sweet potatoes
  • 1 T thyme
  • 1 Tablespoon oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the pork chops: 

  • 4 pork chops
  • 1 T brown sugar
  • 2 teaspoons paprika
  • 2 teaspoons oregano
  • 1 teaspoon rosemary
  • 1 1/2 teaspoons onion powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

For the broccoli:

  • 1 12 oz. 2 broccoli crowns, separated into florets
  • 2 teaspoons oil
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 425º
  2. Toss cubed sweet potatoes with 1 Tablespoon of oil
  3. Spread out on a baking sheet, and sprinkle with thyme, salt, and pepper
  4. Roast in preheated oven for 12 minutes
  5. While sweet potatoes are roasting, combine brown sugar, paprika, oregano, rosemary, onion powder, salt, and pepper
  6. Rub on both sides of pork chops
  7. When potatoes are ready to come out of the oven, scoot them over to one side, and arrange pork chops on the free side
  8. Toss broccoli with oil and salt, and arrange on remaining free space on the baking sheet (Tip: if you run out of room, grab a second sheet!)
  9. Place back in oven for 15-18 minutes until pork chops are done through and vegetables are tender
  10. Remove from oven and serve.

Notes

Lining your baking sheet with foil or parchment paper is a great way to make clean up easy and make sure nothing sticks to the pan.
