Add quinoa and 1 1/2 cups water to a saucepan with a lid, and bring to a gentle boil
Let quinoa boil until tender, then remove from heat and let cool
While quinoa is cooling, dice cucumber, halve cherry tomatoes, seed and dice peppers, dice onion, mince parsley, and drain and rinse chickpeas/garbanzo beans
Add cooled quinoa to a large bowl with the vegetables you just prepared, and drizzle with oil, lemon juice, and sprinkle with herbs, salt, pepper, and finally, feta cheese
