Quick And Easy Pumpkin Spice No-Bake Cookies

Fall is synonymous with pumpkin spice, amiright?

It’s funny though, because when I was growing up, pumpkin pie was literally the only pumpkin spice anything my family ever ate, and then, only during Thanksgiving week.

Then when I was a teenager, we grew a ridiculous number of pie pumpkins in our garden and started making pumpkin pie a lot. My mom started making sugar-free pumpkin pie (sweetened with sorghum), and serving it for breakfast. No complaints from us – we loved it!

But these days, it’s different. Maybe it’s because of Pinterest. ya know? I don’t think I ever would have known how many pumpkin recipes there were if it weren’t for Pinterest!

But now that I do, I find myself wanting to try them all! One of my favorites has been pumpkin spice no-bake cookies. They’re oh-so good, but they’re a little tricky to make, and I’ve been getting a lot of complaints to that affect on the original recipe, so over the last two weeks, I’ve been working on making an easier version – a no-fail version if you will.

And these quick and easy pumpkin spice no-bake cookies are no-fail! Not to mention delicious. But they do have one catch; peanut butter. The very ingredient that ensures that they set up every time without any fuss.

Peanut butter is kind of my kryptonite. I love it! So much so that I can’t have a jar in my pantry without the undeniable urge to wolf it down as fast as I can. So I just don’t buy it anymore, unless I have a specific reason for it.

These cookies are that reason today! You may think that adding peanut butter to pumpkin spice flavored cookies sounds weird, but the fact is, you can barely taste it above the pungency of the pumpkin pie spices.

It’s merely there to add a fudgy texture, and thickness to the cookies. That all!

So don’t be afraid to enjoy these pumpkin spice goodies. They’re perfect for fall get-togethers, and everyone loves them!

Quick and Easy Pumpkin Spice No-Bake Cookies

These quick, easy pumpkin spice no-bake cookies taste exactly like fall SHOULD taste!

If you love the taste of pumpkin in fall, these simple and delicious no-bake cookies are for you.

Ingredients

Scale
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 4 T. Butter
  • 2 cups sugar (I use evaporated cane juice)
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla
  • 2/3 cup peanut butter
  • 3 cups oatmeal (old-fashioned, or quick oats)

Instructions

  1. Combine pumpkin, milk, butter, sugar, and pumpkin pie spice in a medium-sized sauce pan.
  2. Place over medium heat and stir to moisten all ingredients as the butter melts.
  3. Bring mixture to a boil, and continue boiling for 2-3 minutes.
  4. Remove from heat and stir in vanilla and peanut butter until peanut butter is melted.
  5. Add oatmeal and stir to combine
  6. Drop by the tablespoon onto parchment paper.
  7. Allow to cool before removing and storing cookies in an airtight container (or simply eating them ;)).
  8. Enjoy!

    What is 4 T. Butter ?
    What is the ‘pumpkin pie spice’ a mix of? I cannot get that here.

  4. These sound amazing but I can’t have that much sugar. Any ideas on how to make them with something other than cane sugar? Applesauce?? I don’t know how to convert recipes so I’m asking! Thanks for any help!

  5. Tastes yummy and easy to do, but the “cookies” never set up. They were more like a caramel candy…a very sticky caramel candy. ????
