When I was a kid, my idea of fall flavors was pumpkin pie, apple crisp, and hot chocolate if I could talk my mom into it.

Now that I’m older, I’ve added a lot to that list (of course!), but the one that has surprised me the most is fall-flavored breakfasts. Now? They’re my favorite thing about fall!

Healthy Pumpkin pancakes, gluten-free pumpkin waffles, and most recently, pumpkin pie steel-cut oats. Oh man, they’re so delicious!

Creamy steel-cut oats? That’s a win in itself. The added creaminess of pumpkin purée? Now we’re just getting decadent. And we can’t forget about the warm, spicy flavors of cinnamon, nutmeg, ginger, and cloves that makeup pumpkin pie spice.

Drooling? Hang on because I want to talk bout what really makes this recipe rock – the Instant Pot.

How the Instant Pot changed this recipe

My husband bought an instant pot a few years ago during Black Friday (or Cyber Monday – I can’t remember). I had been intrigued by them but didn’t want to shell out the cash for one, but I have to say, I glad he wanted one baldy enough to hit the order button.

At first, I did normal stuff with it. Pot roasts, one-pot pasta dinners, beans, rice, and all that.

But one day, I tried making steel-cut oatmeal in my instant pot, and it kinda changed my life.

You wouldn’t think it would be that big of a deal.

Steel-cut oats only take about ten minutes to cook on the stove in the first place.

But honestly? It’s not so much about the time – it’s the fact that I can toss the ingredients into the pot, hit a button, and walk away that gets me. I don’t have to stay close and stir or make sure it doesn’t burn or turn the heat down when it starts to simmer.

This morning, I came in from a morning run, turned on the Instant Pot, then went off to take a shower.

When I came out, presto! Breakfast was ready.

That ability to walk away and do something else while breakfast cooks is worth a lot as a busy mom.

Instant Pot Pumpkin Steel Cut Oats

If you love oatmeal, try this tasty fall spin on a classic. Plus the Instant Pot makes it SO much simpler!

Ingredients

Scale
  • 1 cup steel-cut oats
  • 2/3 cup pumpkin purée
  • 2 tsp. pumpkin pie spice
  • 3T brown sugar or maple syrup
  • 1 cup milk
  • 1 1/2 cup water
  • A sprinkle of Salt

Instructions

  1. Combine all ingredients in Instant Pot. Stir to make sure pumpkin is evenly distributed.
  2. Lock on Instant Pot lid, and close steam valve
  3. Select Manual mode, and toggle the time to 4 minutes
  4. When finished cooking, you can do a quick release or pressure, or let it cool on its own for several minutes
  5. Serve with a sprinkle of cinnamon, and butter if desired.
  6. Enjoy!
