  • 68 pears, or equivalent canned
  • 1 teaspoon cinnamon
  • 2 Tablespoons granulated sugar
  • 2 Tablespoons lemon juice
  • 1 teaspoon vanilla 

Crisp Topping: 

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 1/2 cups oatmeal – quick oats, old fashioned rolled oats, or a combination
  • 1 1/2 cups all purpose flour or gluten free flour that does not contain added starch or arrowroot powder
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup pecans halved or chopped

Instructions

  1. Preheat oven to 350º.
  2. Core and slice pears into 1 inch chunks. You will need 6 cups or prepared pears. You can also use canned pears that have been drained well.
  3. in a medium bowl, combine the pears with cinnamon, 2 tablespoons of sugar, lemon juice, and vanilla.
  4. Grease a 9×13 inch baking pan, and pour pear mixture into it, making an even layer over the whole pan.
  5. In a separate bowl, combine remaining ingredients except pecans. 
  6. Stir together well in a stand mixer, or with a fork or your hands. You want to combine until it’s all mixed evenly. There will be different sized chunks, but there should be no chunks of solid butter left. 
  7. Add pecans and give it a quick mix (you can also sprinkle them over the top instead of mixing in).
  8. Sprinkle over pear mixture. 
  9. Bake in center of preheated oven for about 35 minutes, until you can see some bubbling fruit around the edges, and the crisp topping has turned golden brown. 
  10. Remove from oven and let cool for several minutes. 
  11. Serve as desired.
