Pan Fried Sweet Potatoes

Ingredients

  • Sweet potatoes, peeled and chopped
  • coconut oil, (or other frying oil)

Instructions

  1. Heat a skillet over medium-high heat.
  2. Add in enough oil to generously cover the bottom.
  3. Dice enough sweet potatoes to cover the bottom of the skillet with a layer or two of 1/4-1/2 inch pieces.
  4. Fry potatoes until brown on the bottom, stir, and repeat until done.
  5. Serve with salt, or, if you feel like a sweet treat, cinnamon sugar.
  6. Enjoy!
