Lavender Lemon Bars Recipe

This delicious and refreshing lavender lemon bar recipe puts a unique spin on a classic recipe.

For the crust: 

 

For the filling: 

  • 3/4 cup granulated sugar
  • 2 Tablespoons dried lavender buds
  • 2 eggs
  • 1 Tablespoons cornstarch
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350º
  2. Combine granulated sugar and lavender buds together, pulse in a blender or food processor 2-3 times, and set aside while you make the crust
  3. Combine crust ingredients and mix well
  4. Press into the bottom of an 8×8 inch baking pan
  5. Bake for 10-12 minutes, until just is just beginning to turn a light golden brown
  6. While crust is baking, sift lavender buds out of sugar
  7. While sugar and eggs together, then beat in cornstarch, and lemon zest
  8. When crust is done baking, remove from oven, and gently pour filling into crust
  9. Place back in oven and bake an additional 10-12 minutes until filling is set, and slightly brown around the edges
  10. Remove from oven, and sprinkle with additional powdered sugar
  11. Let lavender lemon bars cool completely before cutting and serving
