Homemade Summer Sausage

This homemade summer sausage is not only easy, but a real crowd-pleaser. You won’t go back to storebought sausage again!


  • 2 Tbsp Salt
  • 12 Tbsp paprika
  • 1 tsp Onion Powder
  • 1/2 tsp Dry Mustard
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Ground Pepper
  • 2 lbs Lean Ground Beef


  1. Place all ingredients in a bowl and mix well.
  2. Divide into 2 equal portions. Roll each portion into a 2 inch diameter log.
  3. Wrap each log tightly with heavy-duty foil.
  4. Chill for 24 hours.
  5. Using a fork, poke holes in foil along the top and bottom of each log.
  6. Place on a wire rack set in a baking sheet with edges. (or use a broiler pan if you have one).
  7. Bake at 300F for 2 hours.
  8. Let stand in foil until cooled.
  9. Chill before slicing. This is important as it dramatically changes the texture.
