Healthy Oatmeal Chocolate Chip Cookies

These healthy oatmeal chocolate chip cookies are soft, sweet, and oh-so chocoaltey – perfect for snack time! Who ever said healthy cookies couldn’t be good!

I never would have thought snacks would be such a big deal. I mean, I use to go from breakfast, to lunch, to dinner – no snacks.

Then I had kids, and boy have times changed.

Now every five minutes I hear things like “mom, can we have a snack?” and “Mom, I’m starving!”

Where does all that food go?

It’s a mystery, but we go through popcorn and cookies at an alarming rate these days.

But… it gives me plenty of opportunities to create new cookie recipes, which I’m always happy to do – especially when they involve chocolate. 😉

But of course, even that brings a dilemma, doesn’t it? After all, we want to indulge our childrens’ requests for cookies, but we also want them to eat healthily, and let’s face it; most cookies recipes aren’t all that healthy.

Most, but not all. Over the last week, I’ve been working on a new cookies recipe that I think you kids – and you! – will love, and goes what? Yes! they are healthy!

This recipe uses coconut oil, which I happen to love the flavor of, but my daughter hates, so for her sake, I usually use expeller pressed coconut oil, which has no flavor – even though this cookie recipe also uses coconut flour I still couldn’t taste the coconut. Perfect for anybody who hates coconut flavor!

Healthy Oatmeal Chocolate Chip Cookies

Instructions

  1. Preheat oven to 350º
  2. Mix dry ingredients together
  3. Lightly beat egg
  4. Add egg, oil, and vanilla to dry ingredients and mix
  5. Fold in chocolate chips
  6. Divide dough into walnut-sized balls
  7. Flatten and arrange on a cookie sheet, because these cookies won’t flatten a whole lot by themselves, so feel free to arrange them fairly close together
  8. Bake for 8-10 minutes
  9. Remove from oven and let cool for five minutes before removing from cookie sheet.
  10. Enjoy!
